This Thai chicken rice bowl with peanut dressing tastes like your favorite takeout, but it comes together from your fridge in about 30 minutes. Tender chicken, crunchy rainbow veggies, and fluffy rice get drizzled with a creamy, gingery peanut sauce you’ll want to put on everything.
It’s one of my favorite mobile meals. Pack the sauce in a little container on the side, and these bowls travel perfectly to the soccer field, the hockey rink, or the car between activities.
THAI CHICKEN RICE BOWL WITH PEANUT DRESSING
Takeout flavor, 30 minutes, zero delivery fee.
ALL YOU DO:
In a bowl, combine all the peanut dressing ingredients. Stir until smooth.
Divide the rice, chicken, carrots, bell pepper, cucumbers, cabbage, snow peas, and herbs among four bowls.
Top with the peanut dressing, or package the dressing in small containers to take on the road!
PREP TIP:
Rotisserie chicken works great here. You can also cook chicken breasts or thighs ahead of time to use in this bowl. Coleslaw mix stands in well for the shredded cabbage.
SHORT CUT:
Use store-bought jarred peanut sauce or stir-fry sauce instead of the homemade dressing to save time.
